Who is this course for?
This course is for anyone with a drive, passion and skill for patisserie and confectionary.
What do you need to apply for the course?
You will need a level two in professional cookery. Preferably a VRQ2 but an NVQ will be considered. It would also be advantageous to already hold a level three in kitchen and larder.
What are the key things you'll learn?
You will learn a range of specialist skills including advanced dough techniques, paste products, petit fours, cold and frozen desserts. You will also explore the industry and develop your understanding of gastronomy.
How you will learn
There will be a variety of teaching methods but predominantly you will learn in practical sessions. The theory work is largely research based so will take place both in classrooms and away from college.
