This course is delivered through practical, hands-on sessions in a professional kitchen setting, where students build skills through demonstration, practice, and personal creativity. You will develop techniques in covering and decorating cakes using sugar paste and royal icing and design bespoke celebration cake of your own.
As the course progresses, you'll prepare a range of products including gateaux, cupcakes, tea fancies, biscuits, and shortbread each finished to a professional standard. Foundational skills in sponge baking, sugar flower creation, and chocolate Moulding are also covered, providing a strong base for varied decorating projects.
The course culminates in the creation of a showcase demonstration cake, which will be displayed in the college bistro—an opportunity to celebrate your skills and creativity with the wider community.
Assessments will be carried out throughout the course on your practical skills.

After completing this course, students can progress to the FDQ Level 3 Certificate in Professional Cake Decoration. It also provides a strong foundation for those looking to start their own cake decorating or bakery business, combining creativity with technical skill and commercial awareness.
